Paleo Edible Cookie Dough
I can't tell you how many keto or paleo cookie dough recipes I've tried off pinterest that have been a fail. It's also hard finding one that is dairy free, grain free, and now with the discovery of my egg allergy, egg free. I came across a recipe that inspired this one I've created. I switched up a few of the ingredients and am ready to share it with the world afer making it a few times. I baked them as cookies first, but they kinda fell apart while you ate them. The texture and taste was good, just didn't hold together well without those eggs. You can eat this raw or try baking it and see how it works for you! Mix together 1 egg replacer I use bob's redmill. (you could try an egg here I think it would work fine) 1/2 cup avocado oil 1/4 cup powdered monk fruit by lakanto ( you could try any powdered or granulated sugar replacement) 1/2 tsp salt 1 tsp baking soda 1 tsp vanilla extract 1 1/2 cup tigernut flour 1/4-1/2 cup sugar free chocolate chips optional - added vanilla creme stevia drops for added sweetness mix and bake like regular cookies at 350 or eat as cookie dough. Store leftovers in fridge. I hope you like this treat like I do! Try it the next time you are craving something sweet.
